Basic Muffin Batter
I think this is the most appropriate place to start in experimenting with muffin recipes. To this batter, add anything you have on the shelf - chocolate chips, butterscotch chips, peanut butter chips, fruit, nuts, etc. Or add nothing and serve with your scrambled eggs for breakfast with your favourite jam or jelly.
1 c. all purpose flour
2 tsp. baking powder
½ tsp. salt
½ c. white sugar
¼ c. melted butter or margarine
1 egg, beaten
½ c. milk
Stir together dry ingredients.
Add melted butter and beaten egg to milk.
Add liquid ingredients to dry, stirring only to moisten.
Fill greased muffin cups.
Bake at 375° F for 15-20 min.
* Yields – 8 medium muffins.
How lovely to have found this blog!
ReplyDeleteDuring a recent major downsizing in my life, my very food-stained stained, dog-earred copy of Muffin Mania ( purchased in 1984/85?) went Awol so I am delighted to discover your blog. Thank you so much for this!
Muffins that taste like donuts...could there be anything better!
